Sausage and Squash

We have about a month left of CSA boxes coming to us. We've also hit a comfortable groove of recipe rotation, so there hasn't been too much experimentation going on this week. Maybe we're just tired or maybe we're lazy, but we've found a few reliable staple ways to eat the produce that we're getting. Mostly, we're doing very simple preparations these days: cucumber eaten raw, corn boiled and eaten on the cob, tomatoes mashed into a pasta sauce, steamed green beans with butter and salt. There's still all that darn squash and eggplant, though.

In this week's box: summer squash, eggplant, tomatoes, arugula, potatoes, cherry tomatoes, corn, cucumbers, and green beans.

There's always an abundance of squash. Our keeper for the week was Sausage and Zucchini Ribbons. The flavor was very full-bodied and wonderfully Italian. Definitely a keeper. I'll send you over to Bambino Steps for the recipe. Look around while you're there, it's a lovely place.

Sorry for the delayed post today! No Internet at my house. Of course, as soon as Steve got home, he worked his magic and got everything up and running again.
