Wishing...


...that I knew where my son's instant sleep button was (all babies have one of those, right?).
...that my poor puppy's allergies would ease up.
...for the strength to focus on the positive.
...that we have many more days of such beautiful breezes.
...for time to knit, time to sew, and time to be inspired.
...that we remember to spend more time outdoors.
...that we remember to spend more time with each other
...for the ability to freeze moments.
...to find the perfect zucchini bread recipe.

  4. Right now all I wish for is that the battery to my new camera - that FINALLY arrived - will get fully charged so I can try it! That instant sleep button would be handy sometimes too though - for both my boys and me. :-)

  9. From Bob's Red Mill Baking Book:

    2, 9x5 inch loaves

    2 cups unbleached white flour
    1 1/4 cups whole wheat pastry flour (I just use reg. ww flour)
    1/2 tsp. salt
    2 1/2 tsp baking powder
    1 tsp baking soda
    2 tsp cinnamon
    2Tbsp lemon zest
    3 eggs
    1 cup vegetable oil
    1 3/4 cups sugar
    1 1/2 tsp vanilla
    3 cups grated zucchini
    1 cup chopped walnuts (but I don't like nuts in my z bread, so I leave these out)
    Sesame seeds (Amber's addition)

    Preheat oven 350
    grease pans
    Combine dry ingredients & zest in small bowl
    In large bowl beat eggs w/ oil, sugar, vanilla
    Whisk dry into wet ingredients, then fold in the zucchini & walnuts.
    Sprinkle liberal amount of sesame seeds on top before putting in oven.

    Bake 50 mins, let cool for a few minutes before removing from pan
